The beef used in La Cabana is from Uruguay.  As many of you may know, Lanzarote’s harsh terrain does not support live cattle.  So why does Darren choose Uruguay Organic Grass Fed Beef?

Uruguay is documented as one of the top suppliers of grass-fed organic beef and in the U.S, the top supplier.   In nearly all cases, the cattle are raised on small family ranches by gauchos using traditional methods of pasture-based farming. Uruguay has both endless green pastures and an extremely temperate climate; there is no snow, grass is present all year long. This means cattle are never fed on straw or hay in the winter months, which tends to degrade taste. All Uruguayan organic beef complies with USDA rules for handling, feeding, processing and testing.

Darren’s Sundried Tomato and Herb butter (Ideal for a Steak topping)

Whip up 250g Salted Butter until it is soft. In another bowl mix together a handful of chives, chervil, tarragon, 125g Jar of Sundried Tomatoes in Brine, 2 shallots, clove of garlic, drizzle of olive oil and 3 teaspoons of Dijon Mustard.

Put all ingredients in a Robocoop or blender and blitz together.

Roll into a sausage shape and wrap in cling film.

Slice and melt on top of a nice Medium Rare Fillet Steak.
